Halloween recipe : Pepper stuffed with mealworms
Halloween recipe, my first try!
This recipe will suit perfectly for the Halloween period but can me made at any time! If you don’t want to make a halloween recipe, I think that the pumpkin face won’t be useful! It’s not just tasty, it is also very healthy. It contains different vitamins (from A,B,C group), some minerals and antioxydants. The beef and the mealworms are an excellent source of complete proteins (all essential amino acids are present) and fatty acids (mainly omega-6 and a few omega-3).
I personally use fresh mealworms. They have been starved and frozen before being used. If you want, you can use dried one instead. In this case, you won’t have to fry them. If you don’t want to see the insects, you can grind them and mix it with the beef.
When using dried mealworms, take just the half quantity of it and replace by more beef.

Ingredients (for 2 persons) :
- 2 orange peppers
For the stuff:
- 200gr of grounded beef (95% lean)
- 75gr of mealworms
- 3 white mushrooms
- 1 carrot
- 1 red onion
- 1 organic egg (the fatty acids present in organic egg are better!)
For the spices:
- Chili pepper and paprika powder
- Nutmeg
- Salt and black pepper
For cooking:
- Coconut oil (can be replaced by olive oil)
- Tomato coulis
Directions :
Slice the onion,the mushrooms and the carrot.
Brown them in a hot pan with fat.
Rinse the mealworms and fry them in a second pan at medium heat with fat.
Add the chili pepper and paprika powder.
When the first will start to pop-up, it will be good for your halloween recipe.
Mix the onion,mushroom and carrots in a dish with the beef and the egg.
Slice the mealworms in two or three parts and add them to the preparation with some nutmeg, salt and black pepper. (Keep some of them entirely for the decoration)
Preheat your oven at 180°C.
Cut the tops of your peppers,discard the membranes and the seeds. (Cut gently the stems, it will be used for the decoration).
Stuff the peppers with the mix and put the tops of them.
(You can keep some preparation aside for the decoration)
Put them in a dish with the tomato coulis.
Cook in the oven for 40 minutes at 180°C.
Then, the decoration begins : With a sharped knife turn your pepper into a pumpkin by dwelling the eyes, the nose and a genly smile!
For a side dish
You can eat the recipe with green vegetables like broccolis and if you want some delicious and healthy source of carbs you can add some brown rice or a sweet potato!
